Chateau Thivin

The history of Château Thivin goes back to at least 1877, when Zaccharie Geoffray, ancestor of Claude and Claude-Edouard Geoffray, bought fewer than two hectares of vines. The vines are grown without pesticides. Furthermore, biodiversity is enhanced by leaving grass and flowers to grow between the vine rows, using natural compost, and aerating the soil. Fermentation is done either with whole or partially destemmed clusters and aged (depending on the cuvée) for…
6-12 months in foudres (large casks) or 228-litre barrels.
