Champagne Dom Pérignon

Dom Pérignon might have lived in the 17th century, but with one of the most prestigious Champagne Houses named after him, he is sure to be remembered for the ages. The LVMH group now perpetuates with great care the « recipe » that established the House as a driving force in Champagne. Let us start with the sourcing: all grapes originate from the Grand Cru and Premier Cru of Hautvillers (located 5km North of Epernay, between the Montagne de Reims and the Marne Valley). This historical vineyard has been supplying the House since its founding, in 1681, and Dom Pérignon’s abbey proudly stands there. The range is deliberately narrow, with a focus on selecting the best grapes for one particular vintage. This « Vintage » cuvée is a result of 8 years of work in the cellar, a blend of several dozens of reserve wines. A quite a confidential recipe, but a highly recognizable one: creamy, rounded bubbles with toasted notes. The Vintage cuvée will pair very well with creamy fattened chicken or stir fried ceps. The P1, P2 or P3 (P standing for « plenitude ») are none other than a Vintage cuvée with an extended ageing. Time is, and will forever remain, the ultimate essence of Champagne’s character.
