Domaine des Hautes Glaces

The Domaine des Hautes-Glaces was co-founded by Frédéric Revol, an agronomic engineer, and Jérémy Bricka, a winemaker. While studying at the Champollion high-school in Grenoble, Frédéric Revol imagined to produce a truly 21st century whisky, using a local water source off course, but also producing all cereals on-site, and the using only local and renewable energies. Now this would be groundbreaking! In 2009, both partners found the right place in the village of Saint-Jean-d'Hérans, in the Isère department, at an altitude of 900 meters. Here, they quickly elected to separate the fields into five different plots, of « climats », so each whisky would be truly linked to its precise place of origin. A Burgundian whisky, so to speak ! The cereals are dried and brewed on site, and distilled twice in small Cognac alambics. The alcohols are then aged in different casks that have contained either cognac, yellow wine or just new french oaks. The cask-strength bottlings such as the Flavis Single Malt, or the Single Rye Vulson and Ceros, are truly exceptionnal. No less remarkable are the two gems of the Domaine : « Moissons Single Malt », and « Moissons Single Rye », aged in new french oaks and bottled in non-vintage series (L10, S11..). All cuvées however showcase extreme authenticity. Moissons, Organic Malt Whisky originates in the four climates Gabert, Andrieu, Vulson and St Jean. The natural color is kept pale, with slight copper reflections. The subtile notes of white fruits, and lime tree all blend with aromas of citrus fruits and soft spices. Candied notes appear, with exotic fruits and oriental cakes also in the mix. This is an elegant, complex and greedy whisky. Moissons Single Rye originates in the Gabert and Vulson slots. This pale whisky is frank, with an unctuous body. Rich notes of gingerbread and, candied orange are noticeable. The palate is rather strong, with pepper and spices bringing extra length and power to this fantastic rye whisky. The Domaine des Hautes-Glaces released its first whisky in 2012, and has been owned since 2017 by Groupe Rémy Cointeau.
