Champagne Coessens

In Ville sur Arce, in the department of Aube, the Coessens family owns the single-vineyard "Largilliers" as a monopoly. On this exceptionnal terroir, the Coessens have isolated several smaller plots, in order to propose different renditions of a single grape variety: the pinot noir. Largillilers can show a hundred facets, but its underground is in many points comparable to the typical kimeridgian underground of Chablis, with banks of clay and limestone. The proportion of clay oscillates between 25 and 35%, reflecting the local typography, conferring to the champagne its full identity. From this diversity, Jérôme Coessens defined four single vineyards, and a range of eight cuvées, all vintage. Brut Nature originates in the more limestone soil. The champagne shows a great saline character, a real squeleton of minerality. The Blanc de Noirs is the reunion of two plots on clay: the tactil expression in the palate is rounded, comfortable. The house makes one of the best rosé de saignée: grapes of pinot, harvested at perfect ripeness, are first treaded by foot. The juice, in contact with the skins, renders the full complexity of pinot noir. This is a champagne of choice, that will be paired even with the spiciest dishes (foie gras with espelette red pepper, schrimps with pink berries). The interest of Jérôme Coessens for the single vineyard approach is clearly reminiscent of a burgundian philosophy. This attraction to the Côte d'Or has him make two Coteaux Champenois cuvées, originating in the same plot but with different vinifications. The first wine is a fully destemmed harvest, the second is made in full custers. In order to do so, Jérôme Coessens built a relationship with Yves Confuron, a great winegrower from Vosne Romanée. The full harvest undergoes a three week maceration, and ages in burgundian oak barrels for almost three years. 1000 bottles of this jewel are produced the best years. The balance is flamboyant, and rivals with the finest premier crus of Côte de Nuits.
