Champagne Vouette & Sorbée

Bertrand Gautherot truly embodies the winemaking revolution that took place in the Aube region at the end of the 90s. If this part of Champagne, close to Chablis, is still rather unknown, it remains for the connoisseurs a place where many women and men work their vineyard with great respect for the living. When Bertrand did elaborate his first vintage in 2001, the estate already boasted a certification in organic and biodynamic viticultures since 1998. The five hectares of vines are planted for the most part on kimmeridgian slopes, with the exception of the single vineyard « Sorbé » (pure portlandian soil). The range consists of four wines, each highlighting different grape varieties grown on the Estate. « Fidèle » gives the floor to Pinot Noir, while the cuvée « Blanc d’Argile » is all about Chardonnay. « Textures » is a pure Pinot Blanc aged with grape skins in a Qvevri (an egg-shaped clay vessel from Georgia). The Domaine’s rosé de saignée (« Saignée de Sorbée ») is named after the eponymous slot. The grapes undergo fermentation under the action of indigenous yeasts, and are vinified and aged in oak barrels. No dosage is ever added and the champagnes are still disgorged by hand (à la volée)!
