Domaine de Chevillard

Originally from Chambéry, Matthieu Goury grew up in a family of mixed farmers. "As we had animals and vines, we always made wine with my grandfather, so I turned to the vineyard business," explains Matthieu. After multiple experiences in Australia, Canada, the Rhone and then Savoie, he created his estate at the age of 34, with his partner Guillemette Renard. The couple settled in 2016 with 6.5 ha of vineyards. "All our plots are rented because, in Savoie, people don't easily sell their land, it's sentimental. The vineyard suffered very high pressure from mildew in 2016 and froze at 90% in 2017, so Matthieu and Guillemette chose to increase their acreage to 13.5 ha and sell part of their harvest to wine merchants. It was the only alternative when no bank would accept to finance their cash flow. "Working twice the surface area was very difficult, but it has put us back on track and, in the long term, the objective is to vinify all our production”. The estate began its organic certification in 2017 and most of the work is done by hand. The grape varieties grown by the estate are, for the reds, a majority of mondeuse, followed by pinot noir and gamay. For the whites, jacquère dominates, completed by altesse (roussette), chardonnay and mondeuse blanche. In addition, Guillemette and Matthieu have just planted 30 ares of bergeron (roussanne). "The latter has been present in the region for a very long time. It was "revived" in the 1970s, but it should be remembered that we have many links with the Northern Rhône, where jacquère is grown under the name of cugnète. As for our white mondeuse, it is the mother of syrah and viognier," adds Matthieu, with a touch of chauvinism. "Because of their history, the Savoyards have a strong spirit of independence. After all, they have only been French since 1860. The altitude of the vineyard varies from 350 to 600 m for the white grape varieties, while for the reds it does not exceed 450 m. Mondeuse would not ripen higher than that! The jacquères planted on clay soils around the estate are classified as Vin de Savoie. However, two hectares of this grape variety planted on a stony limestone soil (vines over 70 years old, north-east facing) benefit from the Apremont appellation. The mondeuses located in Combe de Savoie grow on clay-limestone soils. As for the Saint-Jean-de-la-Porte cru, the mondeuses, 40 years old on average, planted on red clay rich in iron and quartz, plunge their roots into the limestone mother rock. Matthieu carries out a strict disbudding which results in low yields just like the greatest wines. This practice is the only way for him to harvest grapes that are balanced between matter, sugar and acidity. The density of plantation is high, between 8 and 10,000 plants/ha on the entire estate. Thus, the Goury-Renard couple harvests its red grapes between 20 and 25 hl/ha and its whites from 35 to 40 hl/ha for the jacquères and from 25 to 30 hl/ha for the roussettes. According to the winemaker, the day of harvest is of paramount importance "if we want the acidities not to be diluted. One more day and the balance could be broken." In 2017, after the harvest, the mondeuses of the Saint-Jean-de-la-Porte cuvée were 100% de-stemmed. Only two daily pump-overs, at the peak of fermentation, were done to oxygenate the yeasts. However, no punch-down was carried out, which would harden the wines. For quality purposes, both red and white wines are aged in old Alsatian vats for up to three years. For example, the jacquères are aged two years for and it goes up to three years for the roussettes. No filtration is done since 2019. "The rainfall (1200 mm per year) and the limestone of our terroirs deliver wines that are brisk and of low alcoholic degree. An advantage in times of global warming," emphasizes Matthieu. "Of the 2000 hectares of Savoyard vineyards, 17% are cultivated organically. That's more than Burgundy! We observe more and more new projects (14 in 2022) of organic winegrowers, which is extremely stimulating. Savoie is very dynamic", says Matthieu Goury. Winegrowers of his caliber can only inspire great vocations.
