Domaine Henri Boillot
Based in Meursault, this house relies on estate-owned vineyards as well as a haute couture merchant business. The foundation of the estate by Henri Boillot's grandfather dates back to 1885. Having arrived at the estate in 1975, Henri Boillot rose through the ranks before taking charge of vinification and creating his merchant house in 1995. Today, the estate covers approximately 19 hectares in the Côte de Beaune. Its production is characterized by a high proportion of premier crus in the Puligny-Montrachet and Meursault appellations as well as in the communes of Volnay, Beaune, and Pommard. The most renowned plot of the estate is the Clos de la Mouchère, a 3.96-hectare monopole located within the premier cru Les Perrières in Puligny-Montrachet. This terroir, where the vines reached an average age of 83 years in 2021, produces wines of remarkable concentration. In red, the estate is particularly well-endowed in Volnay premier cru with the Caillerets, Chevrets, and Fremiets plots.
The estate practices what is described as highly sustainable viticulture, without the use of insecticides or herbicides. The planting density is maintained at 10,000 vines per hectare, which promotes the concentration of mineral elements in the berries.
The merchant structure allows Henri Boillot to vinify grapes from grand crus where the estate does not own land. Purchases are made in the form of grapes on the vine or musts, primarily from single-owner plots in order to guarantee the authenticity of the terroir's expression.
Contrary to common practice in the Côte de Beaune, Henri Boillot and his son only use 350-liter barrels (rather than 228 liters). Father and son forbid the stirring of the lees for white wines to avoid any premature oxidation. Their white wines derive a most remarkable mouth-watering character from this.
The vinification of the red wines is entrusted to Guillaume Boillot, Henri's son, who practices integral vinification. The estate's red wines, like the whites, are safe bets of the Côte de Beaune.
