Domaine René Bouvier

Bernard Bouvier manages a 30 hectares Estate, in Gevrey-Chambertin. From this Estate originate no less than 26 cuvées, all located in Côtes de Nuits, and mainly located around the areas of Marsannay, Fixin, and Gevrey. The winegrower follows the principles of organic viticulture, having obtained the certification in 2013. His care to the vines and the respect for grapes in the first place allowed him to take advantage of the diversity of the Côte's soils, more or less rich. A new vinification cellar was built in 2006, which allowed to lengthen the ageings, and to vary the formats. The demi-muids and concrete eggs now add up to the barrels. Today more than ever, the wines are pure and open. We are always seduced by the Marsannay Champ Salomon, old pinots noirs from a massal selection, in just a 0.50 hectare plot. The wine is very much infused, with a variable proportion of full clusters. The ageing takes place for 12 months in barrels, and six months in vats. Champ Salomon has an impressive structure. However it can be a little firm the first few years, one would prefer to decant the wine a few hours before the service, and taste with greed, paired with a piece of beef with herbs.
