Domaine Pascal Chalon

Between Pascal Chalon and winemaking, it was perhaps not love at first sight. The man first studied economic and social administration, hoping to become a hospital director. Eventually, Pascal gives a try to winemaking in the late 90s and takes over part of his father’s vineyard. Seems like he will look after a living thing if not a human being. Straight away, he converts the Domaine to organic farming and follows principles of biodynamic winemaking. The parcels are all located in Visan and Tulette, a very interesting terroir, given the ancient and diverse soils, although mostly a mix of gravel and silex with a first layer of clay and sand. Only native yeasts are used for a long fermentation. The red wines are fully destemmed and cold soaked for a month rather than fully extracted during fermentation. Among the different wines of the Domaine, Ursa Major is our pick: a pleasant and well-balanced cuvée made of old grenache parcels and carignan from Tulette.
