Domaine Bienaimé

Located in Saint-Lamain in the Jura, Domaine Bruno Bienaimé has established itself in just a few years as one of the region's most sought-after names. Before founding his own estate, Bruno Bienaimé spent eight years as the cellar master at Champagne Georges Laval in Cumières. Under the mentorship of Vincent Laval, he mastered organic viticulture and high-precision winemaking. In 2016, drawn by the geological diversity and the aging potential of local varieties, Bruno decided to settle in the Jura. After three years of meticulous searching for premium plots in Arlay and around Château-Chalon, he produced his first vintage in 2017. The estate is intentionally kept at an artisanal scale, spanning 3,5 hectares. The heart of the domaine is situated in the hamlet of Montchauvier (Saint-Lamain). The vineyard heritage includes historic plots, with some old vines dating back to 1942. The estate grows the Jura’s flagship varieties : Whites: Chardonnay and Savagnin. Reds: Pinot Noir and Trousseau. Bruno has also planted Assyrtiko (a Greek variety) for its natural resistance to climate change. Certified organic, the estate uses no chemical inputs. Soil preservation is the absolute priority: plowing and tilling are carried out exclusively by horse to prevent mechanical soil compaction and to stimulate microbial life. This rigorous discipline yields grapes of exceptional purity—a prerequisite for natural winemaking. Bruno Bienaimé’s technical originality lies in juice fractionation, a rare Champagne-inspired method for Jura still wines. During pressing, he keeps only the first juice (the cuvée), which is richer in minerals and acids, while discarding the later pressings (the tailles). Fermentation are triggered exclusively by indigenous yeasts. The ageing of wines takes place in 228-litre barrels and lasts from 21 to 24 months. Breaking away from the traditional oxidative style, Bruno favors ouillé (topped-up) wines, offering a profile that is tense, crystalline, and vibrating with minerality. Production is limited and highly prized internationally, centered around plot-specific (parcellaire) wines. Ardonhancy: An exceptional Chardonnay from the "En Bouillot" and "Champ Levot" plots, renowned for its density and striking acidity. Asangvin: A ouillé Savagnin of great aromatic purity, often vinified without sulfur. La Bulle d’Amélie: A non-dosé Crémant du Jura (or sparkling VDF), a direct reflection of his Champagne expertise. Domaine Bruno Bienaimé represents the elite of the Jura’s "new guard," producing age-worthy wines whose precision and saline depth rival the greatest French whites.
