The adventure told by winemaker Thomas Goudaillez borders on surrealism. Yet, it is not the product of a Belgian artist’s imagination, but rather that of a family of entrepreneurs eager to enter the world of viticulture. In 2015, François Goudaillez, owner of a Girondine house in Néac (Libournais), decided in a flash to acquire a vine plot located in the locality of Cheval Blanc Ouest, which had been put up for sale that very morning. The plot, consisting of only 0.64 hectares of vines, is landlocked within the prestigious vineyard of Château Cheval Blanc. Its terroir, adjacent to Pomerol, is composed of gravelly-sandy soils resting on a vein of blue clay, offering a unique opportunity to try one’s hand at vinifying Merlot. Upon acquisition, the vines, which were too old, were uprooted and replanted with 100% Merlot to allow the estate to start on a fresh foundation. The first vintage of CBO was 2018. Since then, subsequent vintages have followed, and the entire Goudaillez family is involved, assisted by two consultants: Julie Martineau, in charge of vineyard work and winemaking, and oenologist Ludwig Vanneron, who provides an independent, external perspective. While the original Cheval Blanc Ouest plot has not expanded, the Goudaillez family invested in 2022 in another 2.5 hectares of vines located in the Saint-Émilion area (Château Riou de Thaillas), which allows them to vinify all their wines and benefit from the Saint-Émilion Grand Cru appellation. The famous Cheval Blanc Ouest benefits from sustainable viticulture. The harvest target is approximately 40 hl/ha. Harvesting is done by hand. The grapes are sorted in a densimetric bath that eliminates grapes with a potential of less than 12% vol. Vatting takes place in a 40-hl stainless steel tank. Fermentation, carried out using selected yeasts, lasts about eight days. Macerations are long, about one month, with alternating punching down of the cap and pumping over. Malolactic fermentation finishes in November. Free-run wines and press wines are aged separately in barrels (40% new) for 14 months. The blending of the wines is carried out in the second spring following the harvest, with bottling in April. The wine is filtered before bottling to avoid any yeast-related deviations. The Saint-Émilion from the Cheval Blanc Ouest locality is a fine and silky Bordeaux that delivers smoky scents typical of Merlots grown on clay. Characteristic of Saint-Émilions produced at the edge of the Pomerol vineyard, it is delightful to know that, due to historical communal delimitations, it was sold in the past as a Pomerol wine.
