Château d'Estoublon

The Domaine Estoublon is nestled in the Alpilles region, among vines and olive trees. The rosé wines are essentially at war in the Baux de Provence region, but this estate makes his reputation with the reds. Vines of syrah, mourvèdre, grenache and cabernet sauvignon grow on clay-limestone, sometimes sandy soils. The grapes are entirely destemmed and undergo separate vinifications, without added sulphites or added yiests. The estate can therefore vary the formats for the ageings, in order for them to marry with the must and create balance. The wine sleeps for 18 months in tanks, barrels or amphora before bottling at the estate. When opening the bottle, a perfume of garigue and wild berries fills the room. Nothing better against the Parisian greyness!
