Château Haut-Bergey

The latest gem to have found its place on the shelves of La Cave du Château: the Paul cuvée, by Château Haut-Bergey. The Estate has a very promising future, within the prestigious landscape of the Pessac-Leognan Appellation. The Estate has been managed since 2007 by Paul Garcin. Aiming at rendering with his wines the full complexity to the terroir of Graves, he converts the Estate to organic and biodynamic viticulture. The winegrower wishes to change radicallly the methods of culture that had been applied until then, instead pursuing an ideal of biodiversity, on the entirety of the Estate. The lunar calendar drums the rythm of the works in the vineyard, and natural preparations are eloborated, using cowpat, or other plant decoctions. These treatments are now applied instead of pesticides, that have disappeared entirely. This considerable work of the soils has a great impact, bringing extra freshness to the wines. The Paul cuvée is a blend of Merlot and Cabernet Franc: fruitiness marries noble and ripe vegetal notes, so that the balance is built more on freshness and suppleness. Sooo greedy!
