Champagne Cazé-Thibaut
Domaine Cazé-Thibaut is located in Châtillon-sur-Marne in the heart of the Marne Valley. Fabien Cazé is now in charge of the family estate but it was his dad, Roger, who first created Champagne Cazé in 1953. In the vineyard, like for the majority of the champagne winemakers we endorse, chemical products are banned, the soils are looked after and manual work is everywhere, from pruning to harvest. Fabien is part of this new, enthusiastic generation looking to make their bubbles as naturally as possible. The Domaine has a plot-by-plot approach for a given year and grape variety, offering this a way a very unique expression of each cuvée. Speaking of which, “Naturellement” is a perfect introduction to the champagne range: a pinot meunier vinified in barrels and tanks before a 2-year maturation on its lees. La cuvée “Les Fourches” is all about chardonnay, on the sublime terroir of Vandières. The south exposure of the sloping vineyard allows for concentrated and structured grapes. The spontaneous fermentation takes place in barrels and oak sticks around during the wine’s maturation. These bubbles of great personality are truly a firm favourite here at La Cave du Château.
