The producer

Champagne Agrapart & Fils

One name echoes above others at the summit of Côte des Blancs: that of Pascal Agrapart. Upon arriving at the Domaine in the late 1980s, he immediately observed the precious riches of his lands, which included over 9 acres of Grands Crus spread between the villages of Avize, Cramant, Oger and Oiry. Together with Anselme Selosse, the winegrower tirelessly worked on his vines to enrich the legacy of Champagne winemaking. Every decision made at the Domaine follows the same commitment : to extract from its chalk the purest expression of a healthy and vigorous grape. The winegrower believes in working his vines like a garden. His land usually remains covered with grass and is ploughed only to limit plant competition, as required. Nothing is left to chance, from selecting the correct grape maturity to reduce dosage, to respecting living organisms and ploughing of soils, protecting the land with natural compost. Even the vinifaction process is as unobtrusive and natural as possible : his wines are never fined or filtered and the riddling of the bottles is operated manually. To this day few houses can pride themselves on taking care of their plots with the same pugnacity, as the Domaine continues to inspire new generations of Champagne winemakers. Pascal Agrapart is now seconded by his son Ambroise, and a new dynamic is taking shape. While their vines remain neatly kept, innovation is everywhere inside the winery: new stainless steel vats for plot by plot vinification, a newly air-conditioned barrel-cellar... and frequent dosage testing. Among the Domaine’s various cuvées, its iconic Terroirs is key to understanding the aesthetics of the House. The wine is a blend of three parcels from the Grand Cru Avize. It is matured in casks and aged on four-year lees to achieve its noble and textured balance. Avizoise is a tribute to the Grand Cru Avize, which brings together four deep, clayey plots. A rich and powerful giant of a wine. Minéral is aptly named: the grapes from Cramant and Avize are rooted in soils that are more calcareous and not as rich. This wine stands out through its verticality and length. The Domain’s crown-jewel is undoubtedly the Vénus cuvée, named after the mare who works its 60-acre parcel. The grapes come from a hillside called "La Fosse", which is very chalky at the top and clayey at the bottom, where a ditch collects and drains rainwater. Vinification takes place in "demi muids" and the wine is not dosed after four years of maturing on fine lees. The "Agrapart style" stands out by its tension, energy and comfort of mouth. These crystalline champagnes will delicately marry the flesh of the most noble of fish.
