Champagne Jacques Lassaigne

Emmanuel Lassaigne has made Montgueux his fiefdom. The winegrower owns 4 hectares of land and vinifies 5.5 hectares in total. He is now a leading figure in this little-known part of the Aube region. The south-east facing soils are mostly planted with Chardonnay (88%), which draws all of its energy from the deep chalk. The Pinot Noirs are located on the more clayey soils. Although Emmanuel works his soils with the greatest respect (for example, grass is favoured and controlled), it is in the cellar that the winemaker excels. The insatiable Emmanuel likes to play with the raw material to give birth to unusual vintages, often vinified without sulfur. These experimental strolls place the winemaker in the upper echelons of champagnes made by real authors.
