The history of the Stroebel family in Champagne began in the 1930s with Timothée's grandfather settling in Villers-Allerand, followed by the planting of the first vines in the early 1960s. After two generations without direct winemakers, Timothée Stroebel chose to reclaim this heritage. His training in Burgundy exposed him to organic methods and a philosophy focused on terroir expression. In 2001, he reunited the family plots and began producing his own wines under the Stroebel label.
The estate has been certified organic since 2014. Timothée applies biodynamic principles, using natural composts and plant infusions. The modest 3.5-hectare estate allows for meticulous manual work, including cover cropping and experimenting with sheep grazing.
The vineyards of Champagnes Stroebel are exclusively located in Villers-Allerand, a Premier Cru village in the Montagne de Reims. The plots exhibit a diversity of soils: deep clay, light sandy, and chalky. This diversity is leveraged by Timothée, who vinifies the plots separately to express their complementary characteristics. The grape varieties cultivated are Pinot Meunier (55%), Pinot Noir (30%), and Chardonnay (15%).
Timothée Stroebel's viticulture is characterized by very low yields, gentle pressing, and only the "cuvée" (the purest juice) is used. The winemaking is non-interventionist : spontaneous fermentations with indigenous yeasts , aging in old, neutral oak barrels, minimal added sulfur, and no filtration or stabilization. All sparkling Champagnes are Brut Nature (zero dosage). Prolonged aging on lees (e.g., "Triptyque" 36 months) is essential for complexity.
Timothée crafts several exceptional cuvées, such as "Triptyque," which is the estate's signature wine. It is a blend of 33% Chardonnay, 33% Pinot Noir, and 34% Pinot Meunier, from multiple vintages and three terroirs (sandy, chalk, clay). Aged 36 months on lees, it offers notes of red fruits, apple, flowers, and toasted notes, with a powerful and creamy palate. The other "Héraclite" cuvées are Blanc de Noirs made from Pinot Noir and Pinot Meunier, offering notes of black cherry, pepper, undergrowth, white fruits, and flowers, while maintaining a fresh and mineral palate. The Coteaux Champenois Chardonnay "Le Vin Tranquille" 2022 reflects the terroir's minerality, with notes of candied lemon, fresh almond, and iodine. The "Logos" cuvée is a Rosé de Saignée from a single plot, vinified in oak barrels. The "Pour Toi!" Brut Nature Champagne is a blend of the 2017 and 2018 harvests (Pinot Meunier, Pinot Noir, Chardonnay).
