The producer

Champagne Philipponnat

Maison Philipponnat was born in Aÿ in the Marne valley, the cradle of the family since Apvril le Philipponnat, who owned vines at a place called "le Léon" under François 1er (from 1522), between Aÿ and Dizy. For the past century, the family has owned Clos des Goisses, a 5.5 hectare hillside planted on a south-facing chalk slope (45°). In Champagne dialect, 'goisses' refers to a steep hillside. The estate also owns 20 hectares of vines, divided between the villages of Mareuil-sur-Aÿ and Avenay Val d'Or, which are classified as Premier Crus, and the Aÿ Grand Cru. The in-house vineyards are carefully tended by draught horses. Philipponnat also relies on partnerships with winegrowers located in the same villages as its vineyards. Following the harvest, during which the ripeness of the grapes is sought, only the first presses, or cuvées, are kept for vinification. The wines are left to rest on their lees in bottle for between three and eleven years. All its champagnes are made in the cellars of Château de Mareuil. The house produces full-bodied, generous champagnes with a good proportion of pinot noir. For its non-vintage bruts (Royale Réserve range), the house uses blends containing a quarter to a third of reserve wines matured for a long time in oak, according to the solera principle.
