Domaine Baudon

After a decade spent working for various wine properties in the Bordeaux region (at Château Larcis Ducasse, in Clément's case), Marine and Clément Baudon wanted to express their talent by creating their own estate. In 2021, they fell in love with a small property located in the heart of the Montagne-Saint-Émilion appellation, featuring beautiful hillside plots. It's a small domain of 3.8 hectares situated on the Parsac hillsides—among the best terroirs of the AOC—which the couple immediately converted to organic farming. Marine and Clément embody this new generation of winemakers who are breaking the codes of their region while producing authentic Bordeaux wines. They have chosen to nourish their soils by sowing cereals and legumes. In addition to flower sulfur and Bordeaux mixture (copper sulfate), the vines receive biodynamic treatments. Shallow tilling (griffages superficiels) is performed between the rows using a horse. The vineyard plots stand next to the forest and are planted with fruit trees. The yields, which are very measured, hover around 30 hl/ha to achieve a beautiful concentration on the palate. The harvest is, of course, manual. The winemakers produce two main cuvées : Les Terres Brunes (Brown Earths) from clay soils and Les Terres Blanches (White Earths) from limestone soils. Each year, confidential cuvées are added based on the winemakers' inspiration. Vinification is carried out gently to extract only fine tannins. The wines can be enjoyed with great pleasure in their youth while also possessing excellent aging potential. Every cork is individually inspected, and the bottles are hand-waxed. The Estate's Flagship Cuvées are : Montagne-Saint-Émilion Les Terres Brunes : A 100% Merlot cuvée from brown clay soils. This wine reveals the plump structure of the varietal with notes of plum, a velvety mouthfeel, and a lovely sap/freshness (sève). The wine is partially vinified with whole clusters. It is fermented in a concrete vat and aged for 8 months in 225 and 400-liter barrels. Small production of 5,500 bottles. Montagne-Saint-Émilion Les Terres Blanches : A 100% Merlot cuvée from south-facing terroirs where white marl and limestone reveal their complex minerality. This wine expresses the greatness of Merlot on clay-limestone soils. It is vinified with 50% whole cluster maceration and gentle extraction over the first 2-3 days, followed by 1 to 2 punch-downs (pigeages) during the first third of fermentation. It is aged for 8 months in 225 and 400-liter barrels with 10% new oak. Only 5,500 bottles. Montagne-Saint-Émilion Le Cabernet Sauvignon : This cuvée, made from a very late harvest of Cabernet Sauvignon, offers a completely different, more spicy interpretation of the varietal. The grapes are put into the vat with vinification performed without pumping over (remontage) or punch-downs (pigeage) to achieve great tannin finesse. It is aged in 400-liter barrels, followed by a one-year aging period in bottles before release. Production of approximately 500 bottles. Montagne-Saint-Émilion Le Plateau : Merlot selected from a clay plateau composed of 20 cm of topsoil in direct contact with the limestone bedrock. A rich wine with a very fruity and broad aroma, followed by a taut and saline palate. A great wine with excellent aging potential. Production of 900 bottles.
