Domaine Chevassu-Fassenet

Taken over in 2008 by Marie-Pierre Chevassu, Domaine Chevassu-Fassenet long remained a mixed-use farm that combined viticulture with cattle farming. After working in other vineyards, the winemaker took over the reins of this 4.5-hectare estate whose vines were planted by her parents. Located in Ménétru-le-Vignoble—one of the villages of the Château-Chalon appellation—the family home houses 18th-century cellars. The vineyards are planted on typical Jura terroirs: Lias grey marl for Savagnin and Poulsard, and Bajocian limestone for Pinot Noir and Trousseau. Viticultural and winemaking methods are characterized by low yields of around 25 hl/ha. Harvesting is done manually. The estate produces the full range of Jura wines. The red wines in the Côtes-du-Jura appellation are vinified as single-varietals from Pinot Noir, Poulsard, and Trousseau. The white wines are made from Chardonnay and Savagnin grapes, both available in topped-up (ouillé) and "sous voile" (under yeast) versions. The topped-up (non-oxidative) style involves regular topping up (ouillage) of the barrels to prevent the formation of a veil of yeast on the surface of the wine. Topped-up wines evoke white fruits (pear, lemon zest, apple) and sweet almond. Conversely, the white wines (Chardonnay or Savagnin) aged under a veil of yeast in barrels are considered oxidative and develop aromas reminiscent of walnut, curry, fenugreek, peat, or certain spirits. The most famous of these "veil wines," made from 100% Savagnin, is the renowned Vin Jaune (aged for a minimum of 6 years before sale). Domaine Chevassu-Fassenet is a renowned producer of Château-Chalon, the most prestigious Vin Jaune. This legendary wine, made exclusively from the Savagnin grape, is aged by the estate for longer than the required six years. The range of wines includes other Jura specialties: a Crémant du Jura made from Chardonnay, as well as a 100% Savagnin Vin de Paille. Small volumes and high quality are two specificities that explain the success of the estate's wines.
