The producer

Domaine de Chassorney

Frédéric Cossard founded the Domaine de Chassorney with his wife, in 1996. Very quickly, the estate became a favourite of the amateurs of natural burgundy (which are seldom), or amateurs of wines "as close to the grape" as possible. The first plots taken over are located near the appellations Auxey Duresses and Saint Romain. The Estate then grew and reached the size of 10 hectares. Nature is all important in the vineyards: a horse is used to plow between the ranks, and no chemical is allowed to enter the soils. Frédéric is a firm believer in biodynamic principles, and he puts them in place on the entirety of the Estate. The vines are protected by decoctions of plants, and essential oils. The harvests take place particularly late, in october. At the cellar, indigeneous yiests trigger the fermentations, and the vinification is carried out with no added sulphite. The ageing varies from cuvée to cuvée, reaching up to 15 months in oak barrels. Is the glass, such purity is achieved!
