F&L Pillot

Located in Chassagne-Montrachet, Domaine Fernand et Laurent Pillot traces its origins in the Côte de Beaune back to the 17th century. Currently managed by Laurent Pillot and his son Adrien, the estate spans approximately 15 hectares across 50 distinct plots. This diverse mosaic covers 22 appellations, including Chassagne-Montrachet, Pommard, Volnay, Meursault, and Beaune. The estate reached a significant milestone by achieving Organic Agriculture certification with the 2024 harvest. Pruning is conducted during the descending moon to concentrate sap in the root system, promoting vine longevity. On select red plots—notably the Pommard 1er Cru Rugiens—the estate practices tressage (braiding) rather than hedging (écimage). This preserves active leaf surface area without inducing secondary growth susceptible to disease. Harvesting is exclusively manual, featuring rigorous sorting and transport in small crates to maintain the pristine sanitary condition of the berries. The domaine favors minimal intervention to allow the typicity of the terroirs to shine through. White Wines (Chardonnay) : Gentle pressing followed by alcoholic fermentation directly in French oak barrels. Aging on fine lees lasts 11 to 18 months, using a moderate proportion of new oak and light toasts to preserve mineral tension and aromatic freshness. Red Wines (Pinot Noir): Vatted in open tanks for approximately three weeks with regular pigeages (punching down the cap). A traditional vertical press has been reintroduced to achieve silkier tannin extraction. Aging in wood for 12 to 16 months stabilizes the structure while maintaining vibrant fruit. This rigorous approach ensures a consistent and precise production, reflecting the geological diversity of the climats—from the iron-rich power of Pommard to the saline finesse of the Chassagne-Montrachet Premier Crus.
