Domaine Jonathan Pabiot

Jonathan and Nina Pabiot work with discretion within the Pouilly-Fumé appellation. But their wines are their best ambassadors as they have been selected by some of the most demanding sommeliers. The talented winemaker couple is restoring the image of the Pouilly-Fumé appellation, which seemed to be asleep for the last 20 years. The prestige of this « easy-to-sell » appellation had hardly contributed to create a real emulation between winemakers. On the contrary, since 2005, Jonathan and his wife have endeavored to enhance the winegrowing legacy that they inherited from their ancestors through elite viticulture. Their 21 hectares of vine have been cultivated using organic methods since 2006 and are certified biodynamic since 2016. The vines they cultivate are mainly located in the commune of Les Loges on the Loire river banks on Oxfordian and Portlandian limestone soils (Champs de Cris parcel). But, also more confidentially on Kimmeridgian marls (soils rich in fossils of Exogyra virgula, a small comma-shaped oyster). Thanks to these cultivation choices, yields are naturally measured and do not exceed 45hl/ha (less than 30hl/ha for the Luminance and Utopia cuvees). The wines they produce are very different from the stereotypical sauvignons that we usually encounter. In their cuvees, the vine variety is transcended by the terroir. The latter seems to spring from the glass. Due to extended maturation, Jonathan and Nina succeed in producing wines that will be drinkable right away, even if certain vintages will benefit from a little aging. Made from a blend of the estate’s different terroirs (limestone, clay-limestone and flint), the Léon cuvee (10 to 50 year old vines) is the perfect definition of what a Pouilly-Fumé really is. Delicate aroma, minerality and enough flesh to be paired with a variety of dishes (from seafood to fish in sauce). The Luminance cuvee, from a parcel of 1 hectare of Kimmeridgian marls (white soils), is more powerful and concentrated. It is a very mineral wine which will gain from ageing in the cellar for a few years…noblesse oblige! If all of the wines of the estate (Demeter certified), are low in Sulphur (SO₂), an additional step is taken with the Utopia cuvee, still from white soils, aged in old barrels with no added Sulphur. This reveals a full-bodied and ripe Sauvignon with surprising notes of delicately oxidize exotic fruits. It is a surprising wine, miles away from the classic Pouilly-Fumé, but above all, it is a fine gastronomic wine that will delight any gourmet.
