The producer
Domaine Valette
Located in the Macônnais region, in the extreme south of Côte d’Or, the Valettes are real forerunners. The 12-hectare Domaine has been farmed organically for over twenty years. Philippe Valette first applied the principles of Biodynamic viticulture in 1992. An evidence for the winegrower, very careful to respect the soils and microbial life. Here, the vines of Chardonnays are well-cared for, and preserved from chemicals. This colossal work allows Philippe to protect the indigenous yeasts needed for fermentation, and forces the roots of the vines to look for their needed minerals, deep into the limestone. At the cellar, the absence of sulphur during winemaking is allowed by long ageing on lees. The juices are never racked, so as to avoid rushing or tiring the future wines. Every year, the wines stand out through their fluidity, and vibrant yet comfortable mouthfeel. Some cuvées show a subtle, well-controlled oxidization, such as Clos de monsieur Noly, from a legendary parcel in Pouilly-Fuissé. This wine, aged six years on lees, impresses with its depth, stability and saline finish. A true « Umami » wine, for a memorable tasting.
