The producer

Aurélien Revillot

Aurélien Révillot, originally from Burgundy, traveled extensively and made wine in the New World before settling in Restigné—in the Bourgueil appellation—in 2012. This talented winemaker, a trained oenologist, has set himself several challenges. In addition to his position as a vineyard manager for a renowned Bourgueil estate, he created his own domaine of just over 4 hectares, starting with vines located on well-known Benais terroirs. The adage that "great wines are made in the vineyard" seems perfectly aligned with this winemaker's viticultural practices. Aurélien tends his vines at dawn and on weekends. He uses the Guyot-Poussard pruning method to preserve the sap flow of his vines. He prunes them short in his pursuit of optimal grape quality. Green manure is sown between the rows to provide the grapes with the necessary nutrients (including nitrogen) for successful fermentations. Regarding the Cabernet Franc grape variety, grape maturity is a crucial point. Aurélien seeks grapes with the right phenolic and alcoholic maturity. This results in wines with black fruit flavors that don't fall into the trap of over-ripeness. After manual harvesting, macerations are conducted with great skill and last three to six weeks in naturally cool cellars. The free-run and press juices are blended before aging. This ensures the wines maintain a beautiful backbone. Each cru is revealed through a winemaking process that aims to be as accurate as possible, without artificial intervention. Wood and concrete are favored during the aging process, which lasts about twenty months. The wines are then held in bottles before commercial release for up to three years for certain cuvées. Aside from the main cuvée, Sur les Hauts, which is a blend of parcels (2 hectares in total), his other cuvées bear the names of the terroirs from which they originate. Sur les Hauts is a blend of grapes from vines planted on sand, clay, and limestone. The wine is appealing and accessible in its youth, but it has chewiness and benefits from being opened in advance, like all the estate's wines. Les Aubuis comes from a hillside vineyard planted on clay. Although it comes from a cool terroir, this distinguished and deep cuvée yields a beautiful, complex Bourgueil. Bretêche is the name of the estate's oldest Cabernet Franc vine, planted in 1912, on clay-silty soils over limestone. A tense and mineral wine for aging. Brunetières is a cuvée made from Cabernet Franc planted in the 1950s on deep clay. This great wine possesses a structure that is uncommon in the appellation. There is no doubt that Aurélien Révillot is the "little genius of Bourgueil"!
