Champagne Francis Boulard & Fille stands out for its pioneering commitment to organic and biodynamic viticulture. The history of this esteemed Champagne house is rooted in seven generations of winemaking, with Delphine Boulard currently at the helm. In 2009, when the family of Raymond Boulard declined to fully convert their estate to organic practices, Francis Boulard, along with his daughter Delphine, founded their own house. They began with three hectares of vines. Delphine, who studied both design and enology, took over the management of the estate in 2017, following Francis's retirement and the reconstruction of the cellar in 2016. The estate is certified organic and biodynamic, cultivating approximately three hectares across the Montagne de Reims (Massif de Saint-Thierry, Mailly Grand Cru) and the Vallée de la Marne. These vineyards boast diverse soils, including siliceous, calcareous, and clay. The three classic Champagne grape varieties are grown: Chardonnay, Pinot Noir, and Pinot Meunier. Winemaking at Francis Boulard & Fille prioritizes harvesting grapes at their optimal ripeness, yielding "vins clairs" (base wines) that are notably vinous. Dosage is minimal, often resulting in Brut Nature or Extra-Brut (2-3 g/L) Champagnes, a deliberate choice to preserve the purity of the terroir. The flagship Cuvée Petraea utilizes a "Réserve Perpétuelle" (Solera-style system), where 50% of the latest harvest is annually added to previous vintages. This system was re-established with organic practices in 2012. Under Delphine's direction, the wines are aged in old Burgundy barrels and large oak vats (foudres). Natural fermentation, without filtration or fining, underscores the house's commitment to minimal intervention. The estate offers both single-vineyard cuvées (such as Les Rachais, Le Murtet, Grande Montagne) and multi-vintage blends (including Petraea and Les Murgiers).
