Champagne Waris-Larmandier

Located in Avize, this domaine was created in 1989 by Vincent Waris and Marie-Hélène Larmandier with the status of maker-vintner. In the early 2000s, Marie-Hélène manages the family business and builds customer loyalty, while raising her three children alone. As of 2010, her eldest son Jean-Philippe, passionate about the Champagne terroir, wishes to get into wine growing. To train, he prefers to lend a hand to the best vine growers of the region rather than attend university. He works for Benoît Lahaye and learns a lot from this great vine grower from Bouzy. He quickly returns as head of the domaine, making it a condition to convert the family estate to biodynamic wine growing. Under his leadership, the wines gain in minerality and dynamism. The conversion process is completed in 2020 with the award of the Demeter certification. The 6 ha estate – divided into 34 parcels – extends from the best terroirs of the Côte des Blancs to the Aube, passing through Chamery, a village classified as a premier cru in Reims Mountain, planted with pinot noir. Waris-Larmandier champagnes, largely based on chardonnay, are always balanced. They undergo malolactic fermentation, which contributes to their natural flexibility. Examples of the range include: The « Particules Crayeuses », a blanc de blancs extra brut made from five grands crus of the Côte des Blancs: Avize, Chouilly, Cramant, Oger, and the Mesnil-sur-Oger. Its bouquet evokes almonds, dried apricot and fresh butter as well as a pinch of chalk and lichen. Thanks to a discreet dosage (5g/l of sugar), its supple palate proceeds by small watercolor touches and offers a range of flavors reminiscent of hard-candy, milk jam, and almond. The finish is lemony and chalky. The « Carelle 2013 », a blanc de blancs brut nature from the Chouilly grand cru, is a magnificent single-parcel champagne vinified in barrels and aged on laths long enough to offer a wine in its most mature state. Its bouquet evokes chalk, hazelnut and melted butter, complemented by walnut and baked apple. The soft, full-bodied and refreshing mouth (zero dosage) could accompany warm gougères as well as scallops, thanks to its vanilla/woody flavors enhanced by hints of chalk and frothy butter. A real treat.
