Domaine Coume del Mas

It is said that the most beautiful places generate great wines. It is very true for the Coume del Mas Estate, located near Banyuls sur Mer. Philippe Gard is devoted to his region, as well as to his vines. The vineyard is particularly well exposed. Folio Edition Speciale is a gastronomic white, from old vines of Grenache gris, planted on Schists and aged on lees for six months, in vats. In reds, the Grenache show more silkiness and greed, just like the Schist Cuvée. With more complexity, Quadratur asks for more time to polish its tannins. Finally, the Estate proposes a Banyuls, muted on grains, and aged one year in vats. An obvious pairing with chocolate, or an old stilton cheese!
