Champagne Olivier Horiot

Located halfway between Champagne and Burgundy, in the department of Aube, lies the small "Riceys" Appellation. It would not have the same glow without the vision Marie and Olivier Horiot developped since their start in 1999. The winegrowers are die hard believers, and pioneers in their work of casting a new light on the Rosé des Riceys (an Appellation reserved to this colour only!). The singularity of the Domaine Horiot resides in the elaboration of this ancient and not so common nectar. Here, only the finest plots and the best grapes of Pinot Noir are destined for the Rosé, after a short week of maceration in full clusters, and a vinification without sulphites. Although all soils are from kimmeridgian marls, The Horiots set two plots apart, destined to become the two cuvées of Rosé des Riceys. The plot En Valingrain is a light and stony soil, with the presence of iron oxide. The wine always presents itself very open, floral with an astonishing mineral dimension. En Barmont has more clay, and is fresher and more burgunian actually. When tasting, the texture differs with tighter tanins. Olivier amuses himself by comparing the first to Volnay, the second to Pommard: make your choice!
