Xavier Braujou settled in 1998 in Aniane, in a Languedoc region not very well known then in France. He proved very quickly that in this region where blends are the rule, he could highlight a single grape variety, without having to rectify the balance. the winegrower aims at refining the expression of the grape variety, until it reaches ideal purity. The juices are then vibrant with frankness. A great hommage to cinsault, a fragile and delicate grape variety, the cuvée Haut de Carol's already opens on peony, and impresses by its noble and juicy material.
