Domaine Paul Pillot

Paul Pillot is a true master of the Chassagne Montrachet Appellation. The family-owned estate really developped in the sixties, with the arrival of Paul Pillot. Deeply loving of his vines, that he believes are "sacred", he transmitted his passion to his two children Thierry and Christelle, who now manage the Estate. With each passing vintage, the precision of the wines place them at the pinnacle of the chardonnays from the great mountain. The work obviously starts in the vineyard, with a ripe and healthy harvest. ("better early than too late"), and is continued in the Cellar, with great care given on the reduction of the lees. Young, the wines open with straightness and vibrancy. These are wines with great ageing potential, but more than anything pleasure wines.
