The Domaine Étienne Calsac embodies the energy of the new generation of independent Champagne winemakers. Recognized for its artisanal approach, its focus on single-plot expression, and a style that combines chalky tension with textural richness, this house has established itself as one of the most promising in the Côte des Blancs. Founded by Étienne Calsac in 2010, based on family plots that he took over and reorganized, the estate is located in Avize, a Grand Cru village at the heart of the Côte des Blancs. The property remains confidential in size, covering approximately 3 hectares spread between Avize and Grauves (Côte des Blancs), Bisseuil (Grande Vallée de la Marne), and the Sézannais. This diversity of micro-terroirs offers a spectrum of nuances in the traditional Champagne grape varieties, also allowing Étienne to revive a few forgotten varieties. The soils, mainly consisting of outcropping chalk, impart a characteristic saline minerality to the wines. On the emblematic Clos des Maladries plot, certain practices like ploughing by horse are preferred to preserve the soil structure and encourage deep root growth. Étienne Calsac's winemaking aims for a balance between finesse, tension, and texture. Depending on the cuvée and the vintage, malolactic fermentation (MLF) may be carried out or blocked. Some cuvées seek a creamy roundness, while others retain their natural acidity to accentuate mineral freshness. The wines are partially aged in stainless steel tanks and in old oak barrels of 300 to 600 liters, which adds complexity without overtly marking the wine. The domaine favors Extra Brut or Brut Nature styles, with dosages generally ranging between 0 and 7 g/L depending on the cuvée. This approach highlights the purity of the fruit and the richness of texture resulting from the aging process. For his Non-Vintage (NV) cuvées, Étienne uses perpetual reserves. For example, L’Échappée Belle includes approximately 30% reserve wines (dating back to 2011 for certain editions), while Les Rocheforts benefits from a perpetual reserve specific to that lieu-dit (single vineyard), initiated in 2012.
