Domaine Dhondt-Grellet

Located in Flavigny, at the heart of the Côte des Blancs, Domaine Dhondt-Grellet crafts Champagnes that are a faithful expression of their unique single-vineyard terroirs. The estate was founded in 1986 by Éric Dhondt and Édith Grellet, who made the bold choice to produce their own Champagne rather than sell their grapes. Their son, Adrien Dhondt, took over winemaking in the early 2010s, significantly elevating the profile and quality of the domain's Champagnes. Inspired by leading Burgundy winemakers, Adrien was named "Vigneron de l'Année" (Winemaker of the Year) in 2017 at the Trophées Champenois, a testament to the texture, vinosity, and precision of his wines. Domaine Dhondt-Grellet cultivates approximately 6 hectares of Grand Cru and Premier Cru vines, with an average age of 40 to 45 years, and some parcels dating back to 1951. The vineyards are primarily located in the Côte des Blancs, renowned for its exceptional Chardonnay. The domain's parcels are spread across key villages, including Cramant, notably the "Le Bateau" parcel (planted in 1951), Cuis, Sézanne, Avenay, and Chouilly. Adrien practices organic and biodynamic farming across all his vineyards, though without seeking formal certification. The domain avoids all synthetic products, plows the soils for aeration, uses homemade compost, and has been using horse plowing since 2021 to minimize soil compaction. Short pruning and severe debudding limit yields to ensure concentrated fruit, and parcel-by-parcel selection, inspired by Burgundy practices, ensures the full expression of the terroir. Adrien Dhondt favors barrel fermentation for almost all of his wines, using indigenous yeasts, again drawing inspiration from Burgundian traditions for texture and vinosity. After a short settling (débourbage), the base wines are aged for 8 to 9 months in wood (with one-third new oak), undergoing natural malolactic fermentation. Intervention is minimal: reduced sulfur additions, no cold stabilization, filtration, or fining. The perpetual reserve, initiated in 1986, is a cornerstone of the house, containing wine from nearly 30 vintages. Each year, a portion of the reserve is drawn and replenished with the latest vintage, ensuring complexity and consistency. Dosage is often very low or nonexistent, allowing the terroir to express itself fully.
