Champagne Egly-Ouriet

The history of the House was written at the heart of the Montagne de Reims, through its famous Grands Crus that are Ambonnay, Bouzy and Verzenay. Francis Egly, the current fourth-generation head of the family estate created in 1945, has gradually composed the beautiful mosaic of vines plots that make up the vineyard, most of which are Massal Selections of around forty years old. This unique plant material is cared for with the utmost respect: in order not to compact the soil, Francis immediately switched to horse ploughing (his second job, since he is also an equestrian). Glory be to Pinot Noir ! The grapes are harvested only when ripe, despite increasingly late harvesting windows, due to global warming. Once the harvest has been collected, the school of time and patience ensues : the grapes are vinified and aged in barrels for twelve months on average, then, once bottled with their lees, they are laid for a lengthy rest in the cellar. Malolactic fermentation is prevented, in order to preserve freshness and tension, and dosages never exceed 3gr/litre. The Brut Tradition stands out among the various cuvées and is the embodiment of the Domaine's DNA. Pinot Noir makes up the majority of the cuvée (70%) and Chardonnay completes the blend. The wine is rested in the cellar for a minimum of four years in order to achieve its full density. In a glass, the champagne is vibrant and racy. Its fine "almond skin" bitters enhance its balance and deliver a great feeling of freshness to its taster. Vintage-dated cuvées are exceptional champagnes, to be tasted at least once in a lifetime. Rested in cold cellars for ten years prior to disgorging, their bubbles are afforded ample time to complexify and deepen. Subtle notes of fresh hazelnut and honey complement sweet brioche tones. Pairing this wine with sweetbread and morels is simply breath-taking.
