Domaine Macle

The four hectares of the Domaine Macle have been towering over Châton Chalon since 1850. Here, the hillsides of savagnin are too high (400 meters of altitude) and too steep to even be worked on with machines. The blue and black Lias marls make a rather homogeneous soil, but the ripening differs with each plot. Very mindful of this treasure, the Domaine Macle has become a benchmark for microbiology in the vineyard, and has banished any use of chemicals on its vines. The vegetal heritage, with an average age of thirty years, produces low yields, (between 25 and 30 hectoliters/hectare), and the fermentations are always started with indegenous yiests. The estate, currently managed by Laurent Macle proposes three cuvées: a Côte du Jura (80% chardonnay, 20% savagnin) aged three years under veil, one Château Chalon and one Macvin. With their regularity and their precision, these wines embody perfectly the great classicism of Château Chalon.
