Domaine David Chapel

David Chapel, son of the famous chef Alain Chapel, and his wife Michèle have recently settled down in Beaujolais. Since their arrival, both winegrowers have pleaded for a clean viticulture, and a vinification requiring as little intervention as possible. Both of them carry on the philosophy embodied before them by Alain and his great friend Jules Chauvet: a delicate work on a healthy harvest in the first place. The wines often undergo a semi-carbonic maceration, with no added sulphite. However, this method does not betray the soils from which the grape originate, and if the juice remains fluid, the wine never lacks structure. A real favourite!
